“Berliner Eiche” is strictly speaking, an oak-aged Berliner Weisse. It is the most ancient form of the Berlin sourbeer specialty. In the 16th and 17th century, the time when this beer style was born, the brewers used copper kettles to boil the wort, but then the beer aged and also was stored in tubs and barrels made from wood.
This was an inspiration for Lemke. Their Budike Weisse, which we brew in the historical manner with lactic acid cultures and various yeasts including strains of Brettanomyces, initially matures on wood and afterwards in bottle. They tried many different kinds of wood and toasting grades to find out which aromas harmonise best with the fruity sourness of the Berliner Weisse. Lemke’s Berliner Weisse is perfectly balanced by heavily toasted oak. Even better, that this tree species is also native to Berlin – so, true Berlin refreshment. Treat yourself sour!
